Citation: At approximately 0815 hours, while performing a review and observation component for the 01C02 procedure in the Packing Department's; I observe a plant employee's getting box lid covers from a stack of nesting box lid covers to place on boxes of product (Whole Bird Carcasses) in forty (40) pound box. I immediately informed the plant employee's to stop. I rejected approximately 28 boxes of whole bird carcasses for cross contamination with US Rejected Tag B39 801179. The product box lid covers that are transfer using the box chute are contaminated on the outside bottom surface. I immediately inform (Packing Lead) and (Quality Assurance Manager) of my observation. There was approximately eleven hundred and twenty (1120) pound of product retained for recondition. The fifteen (15) contaminated box lid covers that were not use were condemned by plant management. Establishment management has received oral and written communication concerning this noncompliance. After reviewing the plant's Operational Sanitation record and GMP Monitor's record (Packing Department) shows no entries documented prior to my observation of this noncompliance. Regulation:

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
