Citation: At approximately 1600 hours while performing my 01CO2 procedure code I entered the cone/salvage and breast deboning room and all remains from day shift were still in the room including (whole chicken on salvage tray from worker on day shift, with temp of 60F). I came back up to the USDA office to check the facility SSOP plan for second shift and the "Operational Sanitation" plan states: "[redacted] When I went back to the deboning area at 1625 all workers were going to there stations and no sanitization has been performed in the room. 1645 QA was starting to do her sanitation check. I questioned the supervisor "why QA was only doing her check now?" stated: "the equipment and belts are all going to be rejected. However, production was continuing and no corrective actions were being taken. I immediately took regulatory control action and placed reject tag:B24787066 on the room and notified plant management . The company is not conducting procedures during operations at frequencies specified is SSOP's and monitoring daily implementation of procedures conducted during operations. Procedures conducted during operations are critical to prevent direct contamination or adulteration of product. Continued failure to meet regulatory requirements can lead to enforcement actions as described in 9 CFR Part 500.4.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.16(a) Each official establishment shall maintain daily records sufficient to document the implementation and monitoring of the Sanitation SOP’s and any corrective actions taken. The establishment employee(s) specified in the Sanitation SOP’s as being responsible for the implementation and monitoring of the procedure(s) specified in the Sanitation SOP’s shall authenticate these records with his or her initials and the date.
