Violation: 416.13(c), 416.4(a), 416.4(b)
Citation: On Friday, October 28, 2011, while performing ISP Task 01B02, I observed the following noncompliances: At 0528 hours in area # 2 I.U. # 15 I observed a heavy greasy build up on the units of the Packman machine. I rejected the unit and applied US Reject tag # B39801154 and notified Mr. of the noncompliance, at 0528 hours in area # 2 I.U. #8 the Drawing machine I observed a build up of residue from the previous days production in the top roller track of the machine. I rejected the machine with US Reject tat # B3980115 and notified Mr. of the noncompliance. At 0548 hours Mr. notified USDA that the rejected machinery had been cleaned and was ready for re-inspection. The rejected equipment was re-inspected and release at 0550 hours to production. At 0625 while performing pre-operational sanitation in the cutup department I observed several small black specks of grease on the transfer elevator belt. I notified Mr. of the noncompliance and the belt was cleaned and rinsed in my presents. Mr. was notified that a NR would be issued for these noncompliances. These noncompliances are a violation of 9 CFR 416.13(c), 416.4 (a) and 416.4(b) as well as the establishments SSOP program. The establishment has received both oral and written notification of these noncompliances. Failure to comply with regulatory requirements could result in additional enforcement action as described in 9 CFR part 500. Please refer to NR# 0085-2011-17772 for previous preventive actions which were either ineffective or not implemented.
416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.
416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
