Citation: At approximately 1237 hours, while performing a Poultry Finished Products test, I observed fecal material in one of the ten test carcasses. The fecal material was dark brown, runny, and consisted of three drops. One was approximately 1/4 " in diameter and the second approximately 1/16" in diameter; both of these were on the leaf fat inside the left side of the carcass. The third drop was approximately 1/32" in diameter and located on the inside of the carcass between the breast and left leg joint. I took regulatory control action by stopping the line. I informed First Processing Manager, of my finding. Mr. investigated and informed me he adjusted the height of a spray nozzle to more directly rinse the affected area. The line was restarted. I observed Mr. Quality Assurance Manager, perform a retest to determine if the corrective action was effective. I took the affected carcass to the reprocessing station to be rewashed.This establishment has identified fecal material as a potential hazard in its hazard analysis and controls that hazard with CCP #1B.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.

417.2(c)(4) List the procedures, and the frequency with which those procedures will be performed, that will be used to monitor each of the critical control points to ensure compliance with the critical limits;
