Citation: 9 CFR 381.94(a)(2)(iii) Sampling frequency. Slaughter establishments must take samples at a frequency proportional to the establishment's volume of production at the following rates:[newline](A) Chickens: 1 sample per [redacted] carcasses.[newline]While performing the recordkeeping component of the establishment's generic E. coli records, I observed there have been two samples collected per day for the past ten days of operations. Comparing this to the establishment's slaughter records, I determined that in the two-week period 04/09/2012 to 04/20/2012, the establishment slaughtered [redacted] carcasses more than the [redacted] carcasses per day covered by the two/day samples. There was no additional generic E. coli sample recorded for the additional carcasses. The establishment has not performed sampling at a frequency proportional to their slaughter.
