Citation: At approximately 0816 hours, while performing a Poultry Finished Products Standards test, I observed fecal material on one of the ten test carcasses. The fecal material was olive green, runny, smeared over an area approximately 1/4" in diameter, and located on the opening cut of the chicken breast, approximately halfway between the keel bone and the left leg. I took regulatory control action by stopping the line. I informed First Processing Manager of my finding. Mr. tagged the affected carcass and sent it through the washers to determine the cause of the failure. Mr. informed me that he felt, at that time, that the carcass had simply entered the washers backwards, so the sprayers did not hit the affected area. The line was then restarted. This establishment has identified fecal material as a potential hazard and controls that hazard with CCP #1B. This deviation is a failure of the establishment's HACCP Plan for CCP #1B.

Regulation:

381.65(e) Poultry carcasses contaminated with visible fecal material shall be prevented from entering the chilling tank.
