Citation: At approximately 0730, while performing a randomly selected 10 carcass zero tolerance check after the wash cabinet on the "buddhist line", I found a 1/2 inch brown smear on the sixth duck examined. It was located slightly to the right of the oil gland area. I took a regulatory control action and stopped the line. (floor supervisor) and (QC) were notified. Since this was at the beginning of the production day, all carcasses on the line were reprocessed with chlorinated water. QC performed a ten carcass check under my supervision. No fecal failures were found. Production restarted on the line and QC performed zero tolerance checks every 15 minutes for the next hour. The establishment failed to meet CCP1B in the HACCP plan which [redacted]. The establishment is in violation of 9CFR 381.65e which states "poultry carcasses contaminated with visible fecal material shall be prevented from entering the chill tank." This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action.
