Citation: At approximately 06:20 hours while performing an 01B02 procedure Dr. and I, Inspector observed the following: Evisceration: On Line [redacted] (Keystone), The neck cutter blade had rust and product residue from the previous days production. On Line [redacted] (Buddhist), The neck cutter blade had rust and product residue from the previous days production. Also on this line there is a pink automatic oiler (non-food contact surface), had peeling paint. The head cutter blade on this line had numerous rust spots. I verbally notified Quality Control Manager of the non-compliances. I reviewed the establishment pre-op records for 10/6/10 the record was signed that there were no deficiencies found at 06:10 hours. These are violations of 9CFR 416.4(a) and 9CFR416.4(b). This document serves at written notification that the establishments failure to comply with regulatory requirement(s) could result in additional regulatory action.

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
