Citation: At approximately 0620 while performing a scheduled 01B02 procedure in the cut up room of the facility the following conditions were observed. Two of the blue totes used for storing of product after it has been cut had fat and residue from the previous days production. The cutting table used for cutting of the product had fat and residue from a previous days production on the back of the table and along the rear of both white cutting boards located on the table. As this was discovered during pre-operational inspection no product was affected by these conditions the conditions were corrected immediately by the sanitation crew and no regulatory control action was needed. Mr. was notified verbally and in writing of this NR of these Non compliances. Reg 9 CFR 416.4(a) states All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product Reg 9 CFR 416.4(b) states Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product. Reg 9 CFR 416.4 (d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments. This document serves as written notification that your failure to comply with regulatory requirements could result in additional regulatory or administrative action(s)

Regulation:

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(b) Non-food-contact surfaces of facilities, equipment, and utensils used in the operation of the establishment must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
