Citation: At approximately 0730 while observing employees working in the sizing room the following was observed. On two separate occasions employees were observed picking ducks off the floor that had fallen there off the sizing line. On both occasions the employees did wash these carcasses before returning them to production. A review of the Establishments SSOP showed the following. under the section "Personnel Hygiene" "[redacted] " On both occasions witnessed by the IIC neither employee washed their hands after removing the carcass from the floor and washing it. Reg 9 CFR 416.13(b) states Each official establishment shall conduct all other procedures in the Sanitation SOP's at the frequencies specified. Reg 9 CFR 416.14 states Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOP's and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel. Ms. was notified verbally and in writing of this NR of this non compliance. This document serves as written notification that your failure to comply with regulatory requirement(s) could result in additional regulatory or administrative action(s)

Regulation:

416.13(b) Each official establishment shall conduct all other procedures in the Sanitation SOP’s at the frequencies specified.

416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOP’s and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.
