Citation: At approximately 1345 hours while performing an 01C02 procedure i, Inspector observed the following: On the Buddhist line in the evisceration department the employee who was responsible for eviscerating (pulling) the ducks did not perform his job correctly the ducks were not completely eviscerated, 1 duck was not eviscerated at all and 3 ducks were hung back on the reprocessing rack because they were not properly eviscerated. This has been verbally discussed with the both supervisors in evisceration but the problem has continued. This is a violation of 9CFR416.4(d) which states "Product must be protected from adulteration during processing, storage, loading, and unloading at and during transportation from official establishments." This is also a violation of 9CFR381.76 (a) which states" A post-mortem inspection shall be made on a bird-by-bird basis on all poultry eviscerated in an official establishment. No viscera or any part thereof shall be removed from any poultry processed in any official establishment, except at the time of post-mortem inspection, unless their identity with the rest of the carcass is maintained in a matter satisfactory to the inspector until such inspection is made. Each carcass to be eviscerated shall be opened to so as to expose the organs and the body cavity for proper examination by the inspector."

Regulation:

416.4(d) Product must be protected from adulteration during processing, handling, storage, loading, and unloading at and during transportation from official establishments.
