Citation: At approximately 0615 hours while performing pre-operational sanitation in the evisceration department of the plant the following conditions were observed. [newline]A large gray tote (combo) used to store ducks and duck parts had dirt and product residue from a previous days production in the bottom and sides of the tote. [newline]A large stainless steel strainer located near the end of the line used for giblet and parts had fat and meat particles from a previous days production located in the holes of the strainer. [newline]The tube type device used for storing the end of the lung gun when not in use had fat and meat particles down inside the tube that was from a previous days production [newline]all these conditions were observed on line the very first line as you enter the evisceration department also known as the "Buddhist Line" [newline]all of these conditions were corrected immediately by the plant and no reject retain tags were used also because this was during pre-operational sanitation no product was affected by these conditions [newline]Reg 9 cfr 416.13(a) states a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP's before the start of operations. Reg 9 cfr 416.13(c) states Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP's Reg 9 cfr 416.14 states Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOP's and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel

Regulation:

416.13(a) Each official establishment shall conduct the pre-operational procedures in the Sanitation SOP’s before the start of operations.

416.13(c) Each official establishment shall monitor daily the implementation of the procedures in the Sanitation SOP’s.

416.14 Each official establishment shall routinely evaluate the effectiveness of the Sanitation SOP’s and the procedures therein in preventing direct contamination or adulteration of product(s) and shall revise both as necessary to keep them effective and current with respect to changes in facilities, equipment, utensils, operations, or personnel.
