Violation: 416.1, 416.4(a)

Citation: At approximately 0650 hours while observing the start of  operations I, Inspector observed the following;[newline]In the trough on the Buddhist line there were gloves, scissors, and a steel in the trough, additionally there was a knife and a steel in the trough on the keystone line.  I verbally notified evisceration supervisor of the non compliance, he took immediate action and washed the "tools" with chlorinated water before any ducks came in contact with the "tools".  At approximately 1245hours while performing a "Sanitation Performance Standards" task I observed the following:  On the Keystone line there was a steel on the pipe of the trough where hocks are cut.  I verbally notified evisceration supervisor again of the non-compliance and he immediately washed the steel with chlorinated water.[newline]This is a violation of 9CFR416.1 and 416.4.[newline]I verbally notified QC manager of the non-compliance and that I would be issuing a non-compliance record.

Regulation:

416.1 Each official establishment must be operated and maintained in a manner sufficient to prevent the creation of insanitary conditions and to ensure that product is not adulterated.

416.4(a) All food-contact surfaces, including food-contact surfaces of utensils and equipment, must be cleaned and sanitized as frequently as necessary to prevent the creation of insanitary conditions and the adulteration of product.
