Recipe: Mom's Apple-Sweet
Potato Casserole
In a casserole dish, make a layer of sweet potatoes (peeled and cooked), then
place a layer of apples (not cooked) on top, drizzle maple syrup over the apple layer and
sprinkle with cinnamon.
Continue building layers to the depth of the casserole dish. The top layer should
be apples sprinkled with cinnamon and raisins and maple syrup drizzled on top.
Bake at 350 degrees for 25 minutes covered with foil (shiny side facing apples) -
To darken remove foil for 10 more minutes and turn up temperature to 450#161# - check
after a few minutes to make sure it isn't turning too dark too fast.
That's it. Serve hot on a festive occasion.
For an added treat, you might want to sprinkle walnuts on each layer of apple but
be sure not to burn the top layer. You can also try shaking a little lemon or orange juice
on top of the sweet potato layer for some zing.
