RECIPE: Consuelo's Spanish
Tortilla
(potato and onion "omelet")
12 inch nonstick pan (other pans may create difficulty flipping and may cause
burning)
4 medium size potatoes (sliced thin 1/8 in)
1 onion chopped into medium size
pieces
6 tsp Ener-G egg replacer
10 tbs water
1-1/2 tbs flour
1/2 tsp turmeric
In a
nonstick skillet add sufficient oil to coat pan and cook potatoes and onions. Salt to
taste. Do not overcook or brown. They will cook further in omelet.
In a large bowl whisk
egg replacer, water, flour, turmeric and salt to taste. Combine cooked potatoes
and onions with "egg" mixture. Return to greased nonstick pan and flatten into
omelet shape.
Over medium heat cook one side 2 minutes turn and cook other side 2
minutes. Continue to cook and flip every 3-5 minutes for about 15 minutes or
until omelet feels firm. If omelet begins to brown lower heat to compensate.
Serve warm. If you refrigerate it, let it stand to room temperature and
serve in a sandwich with Italian bread or rolls.
