No Animals Were Harmed
At This Picnic
In a community where on any given weekend, a dozen local churches and
firehouses are busy sponsoring pig roasts, chicken
barbecues and steak dinners, a crowd of vegetarians and veggie-friendly
people (and their companion canines) came together in Chatham on July
4th to celebrate Independence Day with veggie burgers, tofu dogs and
grilled "un-chicken." Picnickers showed off their vegetarian culinary
skills with an incredible array of homemade food, while Jody Rael and his band picked out
bluegrass tunes over special solar-powered amplifiers. In the front-page
story that ran in the Hudson Register-Star ("Locals Declare
Independence ? From Slaughterhouse." July 8, 2002), MHVS member Zinnia
Konviser summed up the spirit of the day: "I can't imagine eating
animals any more than eating the dogs roaming around here."
Phoenix Rises in Chatham
When in Columbia County, run, don't walk, to The Phoenix, a
100% organic vegetarian café located at 10 Main Street in the
Village of Chatham. I like to think of it as "Nancy's Kitchen" -
a warm, sunny, welcoming place filled with fresh-baked scones and muffins,
heavenly homemade soups (there's always a vegan one), fresh juices and
delectable daily specials. Vegetarian owner and chef Nancy Trefethen
has an unwavering commitment to buy organic and local produce - and it shows in the flavorful and
healthful foods. Mid-Hudson Vegetarian Society members

Peter Meisel, owner of luscious Luna 61 in Red Hook, is
preparing to open another vegetarian eatery on lower Warren
Street in Hudson. Plans are to serve only breakfast and lunch at first, but once
the word gets around about Peter's yummy cuisine and
decadent vegan desserts, we predict that patrons will be begging for
more. Watch for details in the next newsletter.
