2003 SPECIAL SUMMER HEALING ISSUE
CAULIFLOWER BURGERS
From Louise Hagler's "Meatless Burgers"
2 cups
chopped cauliflower
1 cup chopped onion
2 cloves garlic minced
1/2 cup walnuts
1/2 pound firm tofu
1 teaspoon sea salt
1/2 teaspoon finely ground pepper
1 teaspoon paprika (I always use sweet Hungarian paprika)
1/2 cup wheat germ
2 Tbs. nutritional yeast (health food stores have it, and it is good sprinkled
on salads too)
Steam the
cauliflower for 5 minutes. Then finely chop in a food processor.
Combine
with the chopped onion.
Preheat the oven to 350°.
Finely chop the garlic and walnuts in a food processor
and mix with cauliflower and onions.
Still using the food processor, blend tofu,
salt and pepper.
Now mix everything you have chopped together.
Then add the wheat germ and nutritional yeast and form into patties. Arrange on
an oiled baking sheet. Bake for 15 minutes on each side until browned.
Serve on toasted whole grain buns with your favorite fixings.
