Recipe: A Cooling Summer Salad
TRADITIONAL GREEK SALAD

Quick, delicious, and satisfying on hot summer evenings. My family and I learned to prepare this traditional salad on a trip to Greece several years ago. It is a favorite for both children and adults.

Peel cucumbers and cut into 1/4" thick slices; place in a bowl.

Slice a small red or vidalia onion into rings and arrange in a layer on top of the cucumbers.

Cut tomatoes into wedges, and arrange on top of the onions.

Add pitted calamata olives.

Sprinkle with dried oregano leaves, and a light vinegar.

Drizzle with olive oil.

Serve with crusty French bread dipped in olive oil.

Optional: you may wish to add capers.
