From Spring Issue - 2004

Potato Pudding (Kugel)

1-1/4 lb. pared baking potatoes (shredded)

1/2 cup grated (or finely chopped) onions

Egg replacer (amount equivalent to 2 eggs)

1/4 cup + 2 Tbs. matzo meal

1 tsp garlic powder

1/2 tsp. salt

1/4 tsp. freshly ground pepper

1/4 cup minced scallions

1/2 cup soy milk

Preheat oven to 350. Spray a 13x9 inch baking pan with nonstick cooking spray: set aside

1. In a large bowl, combine potatoes, onion and egg replacer. Stir in remaining ingredients and mix well: gently spoon into prepared pan.

2. Bake 35-40 minutes, until browned around edges. Let stand 5 minutes before cutting into 12 equal pieces.
