Walnut Vinaigrette
1/3 cup walnut pieces
2 Tablespoons olive oil
1 Tablespoon red wine vinegar
1 Tablespoon + 1 teaspoon grape juice
1 teaspoon minced shallot
salt & pepper, to taste
1. Toast walnut pieces in a preheated 375° oven until colored
and fragrant, about 6-8 minutes. Cool and coarsely chop.
2. Combine walnuts and oil in blender and process until paste
forms.
3. Add the rest of the ingredients and process until
homogenous.
Season with salt & pepper, to taste.
