From Vegan Cooking Demonstration at Bread Alone Cafe
HUMMOS
1 15 oz. can chickpeas (garbanzos)
1/4 cup tahini
3 cloves of garlic, peeled
juice of 2 lemons
1 teaspoon cumin
1/2 teaspoon sea salt or Herbamare
1/2 cup parsley
Drain chickpeas, reserving the liquid. Place all ingredients
except the parsley in food processor. Process until smooth. Then and add more
lemon juice or seasonings if desired. Add parsley and process until it is well
mixed. If needed, add some of the liquid back until desired consistency is
reached. You may also add some olive oil, but it tastes good without any.
This is tasty, versatile and very high in protein. Instead of
parsley try olives, scallions, or red pepper. Hummos is widely available in
supermarkets now, but it is easy and fun to make your own. Use a 25 oz. can and
make two versions. Costs less too. Good for parties, family meals, lunches and
snacks.
