From Vegan Cooking Demonstration at Bread Alone Cafe
LENTIL WALNUT PATE
1 and one half cups brown lentils
4 cups water
2 Tablespoons Olive Oil
2 large onions, slices
1 cup chopped walnuts
1 Tablespoon Soy Sauce
sea salt and pepper to taste
Cook the lentils 45 minutes, drain any excess water (you can
use it in a soup or sauce)
At the same time saute the onions slowly in the olive oil.
Check and stir frequently. This long, slow cooking of the onions gives this
spread its outstanding flavor.

The above recipe is one of many alternatives to pate de foie
gras which is considered a delicacy by some. It is made from the livers of ducks
or geese who have been force fed to make their livers extremely fatty. This
causes them great pain.
