From Vegan Cooking Demonstration at Bread Alone Cafe
LIKE CHICKEN SALAD
1 package tempeh, any flavor
Eggless mayonnaise, as needed (Veganaise ® recommended)
2 scallions, chopped
1 stalk celery, chopped
1 carrot, shredded
Handful chopped fresh parsley, or 1 Tablespoon dried
2 teaspoons poultry seasoning
1/2 teaspoon good ole yellow mustard
Steam the tempeh for 20 minutes. Let cool, whirl everything in
the food processor. Good on any bread, but rye is really nice.
For the salad version, chop the tempe into small dice, process
the other ingredients and mix together with a fork.

Abrams of Delicious Adventures. She has the salad versions, I changed this into
a spread - delicious either way. Here are two other versions from Maribeth for
