Classic Chocolate Chip Cookies

brought these to our event at the Northern Spy and you asked for it! Or even if
you didn't or were not there these are tasty and all vegan.
Ingredients:
3/4 cup dry sweetener (raw sugar)
1/2 cup soy margarine (1 stick), softened
1/2 cup oil (I use sunflower)
3 tbsp water
2 tsp vanilla extract
2 1/4 cups flour (try spelt flour, but add 1/2 tsp of baking powder too)
1 tsp baking soda
1/4 tsp salt
1 1/2 cups choc chips = 10 oz. bag (get the good/organic or dark chips!)
Preheat oven to 375. In a large bowl mix together flour,
baking soda, (baking powder, if using spelt flour) and salt. In a mixer bowl,
stir together the sweetener, margarine, oil, water, and vanilla. Add this
margarine mixture to the flour mixture. Mix together well. Then add in the
chocolate chips.
Scoop spoon sized portions onto an ungreased cookie sheet,
roll between hands into balls, then slightly press onto cookie sheet with tips
of fingers. Bake for 8-10 minutes or until the tops are slightly browned. Let
cool before removing from the cookie sheet. This recipe makes at least 20 large,
35 medium, or at least 50 small cookies. Enjoy with a nice cold glass of soy or
rice milk!
