Vegan Oatmeal Cookies
Cruelty free and also cholesterol free too! Wonderful for
lunchboxes, family meals, entertaining, potlucks or put on a nice plate, maybe
with a doily, wrap in plastic wrap, put some ribbon around it and – there you
have it, a nifty gifty!
3 cups uncooked oat flakes (regular not instant)
1 cup whole wheat flour
1/2 teaspoon cinnamon and 1/4 teaspoon cloves
1/2-teaspoon baking soda and 1/4 teaspoon salt
1 cup maple syrup
3/4 cup room temperature non-hydrogenated spread (such as Soy Garden)
1/2 teaspoon vanilla
2 teaspoons Energy Egg replaces mixed into 4 Tablespoons water
1/2 cup raisins
1/2 cup chopped walnuts or pecans (optional)
No machines needed. Two bowls and a strong fork! Preheat oven
to 370 degrees.
Mix oatmeal, flour raisins, nuts (if using) salt, soda and
seasoning in a large bowl. In a smaller bowl mix the buttery spread, egg
replacer, maple syrup and vanilla. Add to dry ingredients, mix together but only
until all ingredients are combined.
A soup spoon works well for placing a rounded cookie on an
oiled sheet, They don’t spread out much at all. You will get about 2 and 1/2
dozen.
Bake only 10 minutes.
