The mission of the Mid-Hudson Vegetarian Society, Inc. is to promote the vegetarian ethic in the Mid-Hudson (New York) region, educate the community and aid anyone in the pursuit of a totally vegetarian (vegan) cruelty-free and healthful lifestyle.
Recipes
Hummus
1 15-ounce can of chickpeas (garbanzos)
¼ to 1/3 cup tahini
3-4 cloves garlic, peeled (can use roasted garlic for a
mellower flavor)
juice of two lemons
1-teaspoon cumin
½ teaspoon sea salt or Herbamare seasoning
Extras
Parsley, dill, scallions
Sun dried tomatoes, roasted red peppers
Fresh red or yellow pepper, olives
Drain chickpeas, reserving the liquid). Place all ingredients
in the food processor. Process until smooth. Taste; add more lemon juice or
seasoning if desired. Add any extras and process, you may wish to process only
until small chunks are left so the color shows. Add back in a bit of the liquid
if too thick (save the rest for soup or sauce). You may want to add some olive
oil.
This is tasty, versatile and very high in protein. Hummus is
widely available in supermarkets now, but it is easy, fast and fun to make your
own. Costs less too. Use a 25-ounce can and make two versions, Good for parties,
family meals, lunches and snacks.
