Recipes
India Inspired Skillet Dish
one half pound firm tofu
1 large Yukon gold potato
1 broccoli stalk
2 carrots
1 medium red onion
(all the above cut into small dice)
1 Tablespoon grapeseed oil
1 teaspoon turmeric
1 teaspoon sweet red Hungarian paprika
one fourth teaspoon each dry mustard and ginger
I Tablespoon Annie's vegetarian Worcestershire Sauce
sea salt and ground black pepper to taste
Use a heavy skillet, a Le Cruset or cast iron work well. Sauté
the onion in a small amount of water, when almost soft add tofu, potato,
broccoli and carrot, sauté, stir often, adding small amounts of water (this
helps brown the food without burning) after a minute or two, add the seasonings,
then the oil, keep stirring until every thing is done and slightly crispy. This
serves two, if you double it you may want to make two batches, as it shouldn't
be crowded in the pan to get it nice and browned. If desired add a handful of
yellow raisins in the final moments.
Something different for a week end brunch or other casual
meal.
