Seitan Mushroom Stroganoff
Olive oil for sautéing
2 cups mushrooms, washed, trimmed and sliced
2 cups bite-sized seitan
1 onion, chopped
3 Tablespoons unbleached flour
1 cup soymilk
1 cup vegetable broth
2 Tablespoons sherry, optional
1 teaspoon dried basil
¾ teaspoon poultry seasoning
Saute the onions and seitan in olive oil for several minutes
on medium heat until the onions are soft and the seitan is browned, then add
mushrooms and continue to cook until softened. Sprinkle the flour over the
vegetables and stir to coat. Add the soymilk, vegetable broth, basil, poultry
seasoning, and optional sherry, stirring to avoid lumps. Cook for several
minutes, stirring occasionally, until the sauce thickens. Serve over rice or
wide noodles.
