TVP Nachos

1 ½ cups TVP

1 1/3 cups boiling water

olive oil for sautéing

1 onion, chopped

2 cups tomato sauce

3 Tablespoons chili powder

1 Tablespoon sweetener

2 teaspoons garlic powder

½ teaspoon pepper

Chips

Vegan cheese (homemade, or Follow Your Heart ® recommended)

Put the TVP in a medium bowl, mix in the boiling water, and let sit for several minutes. Sauté the onion in olive oil until softened, then add the reconstituted TVP and fry until somewhat brown and crispy. Add remaining ingredients, bring to a boil, reduce heat, cover, and cook for about 10 minutes, stirring occasionally. Spread chip on serving platter. Ladle the TVP mixture over the chips, then top with grated vegan cheese.
