Not Really Cheese Spread
Try this as an appetizer or sandwich spread. Works well with a
variety of whole grain cracker, breads or chips. Or with carrot or celery sticks
or Romaine lettuce leaves.
1 pound of firm tofu, drained and water pressed out
6 Tablespoons nutritional yeast
4 Tablespoons lemon juice
4 Tablespoons tahini
3 Tablespoons light miso
1 teaspoon paprika (sweet Hungarian is best)
2-3 roasted garlic cloves
2 Tablespoons minced onions or 1 Tablespoon dried onions
I teaspoon Herbamare seasoning
1 teaspoon mustard, any kind
Put all ingredients in a food processor. Process until smooth.
Then ---actually, that is it. It is done. You can then put in a bowl for
everyday use, or carefully arrange on a salad or part of a vegan antipasto
platter with olives, red pepper slices whatever strikes you as festive. Some
people are surprised at how very good this very easy mixture is. Try it soon.
