Kay's Warm and Nutty Cinnamon Quinoa
My good friend Kay was far from nutty when she served this for breakfast on a
recent visit. High in protein, antioxidants and extremely delicious. Don't go
through the winter without trying it
2 cups water or 1 cup water and 1 cup rice or soy milk
1 cup Quinoa (well rinsed)
2 cups blueberries or blackberries
one-half teaspoon cinnamon
one-third cup chopped pecans or slivered almonds
4 teaspoons agave or
you favorite sweetener.
Serve with additional rice or soymilk.
Bring liquid to a boil, add quinoa and nuts and immediately turn down heat and
simmer 12-15 minutes (you will see the little white rings form in the grains).
Turn off heat, let stand for 5 minutes, stir in cinnamon. Transfer to bowls, add
berries and nuts, drizzle 1 teaspoon sweetener over each serving.
Easy enough for everyday - fancy enough for company.
