Sun Dried Tomato Pesto
This is wonderful to make when there is lots of fresh basil in
your (or your neighbors) garden. However, it is good enough to justify
buying fresh basil at the store in any season. Use as a spread on crackers or
bread. Wonderful for entertaining or why wait? Put it in a lunch box. It also
works well as a topping for noodles or rice.
I cup sundried tomatoes (not the ones in oil)
1/2 cup sliced or whole almonds
1 teaspoon minced garlic
Fresh basil about 1/2 cup. loosely packed
Extra virgin, cold pressed olive oil to taste
Possibly salt, but many sundried tomatoes are salty – taste
first About 1/2 teaspoon of oregano or Italian seasoning
This is all done in the food processor, do the almonds first,
then add the basil then the tomatoes and garlic and seasonings. Add the
olive oil last, you may do this in the process or transfer to a bowl and add and
mix with a fork until you get the consistency you want. If watching fats, use
a small amount of oil and some water to get the desired texture.
I took this to a potluck – the man next to me said "I really
wish I had a BIG steak". I restrained my self and said nothing. Then he took a
bite of this dish and said; "Now that’s really good!" So offer this to your
carnivorous friends as well as to fellow vegetarians.
