Kale, Collard Greens, Cabbage, and Rice with Tomato Sauce

Ingredients

1-1/2 lbs. Cabbage
1-1/2 lbs. Collard Greens
1-1/2 lbs. Kale
1-1/2 lbs. Onions
1 tbsp. Mint, dried
2 tbsp. Oregano, dried
2 tbsp. Parsley, dried OR 1 cup, fresh chopped
1 - 28-oz. can Crushed Tomatoes
2 - 6-oz. cans Tomato Paste
2 cups Brown Rice cooked in 4 cups Water

Preparation

We prepared this recipe in our wok, but it can also be prepared in the microwave oven or on the stovetop.  This recipe will serve 6-8 people as a main meal, and is great for leftovers.

We begin by placing the rice pot and water on the stovetop, and turning the heat to high to bring the water to boiling.

While the water is heating, begin washing and cleaning the veggies and peeling the onions.

When the water begins to boil, add the rice, cover, lower the heat to simmer, and cook until all the water is absorbed into the rice.

We use our food processor to shred the cleaned veggies, but they can also be chopped by hand.

Place the shredded veggies in the wok, add the mint, oregano, and parsley, and stir-fry in a little water until the veggies are tender.

When the veggies are tender add the crushed tomatoes and tomato paste, and mix well.  Add the cooked rice, and lower the heat to simmer, and thoroughly mix all of the ingredients together to ensure a blending of the flavors.

Serve and enjoy with a large tossed salad.

Leftovers can be stored in the refrigerator in a covered container for a few days, and reheated in serving quantities in the microwave.
