Plantain and Brown Rice with Carrots, Celery, Onions, Peas, and Spice is a delicious vegan recipe that takes about 15-20 minutes preparation time and about 45 minutes cooking time. This recipe will make about 5 quarts, which is great for stuffing a large Hubbard squash or pumpkin, and any smaller squash cavity. It also makes a great side dish and is even good for breakfast.
We usually make this recipe in our microwave oven in a large covered baking dish, or it can be made in a conventional oven at 350 degrees F., which takes a little more cooking time.
Begin by washing the fresh veggies and peeling the onions, carrots, and plantains.
Dice the veggies and plantain and put them in the large covered ceramic or glass baking dish. Add the frozen peas, raisins, and spices, and mix well.
Place the covered baking dish in the oven and cook until the onions become semitransparent. It is best to mix about every 10 minutes.
While the plantain and veggies are cooking, place the rice pot and water on the stove top, when it comes to a boil, add the rice, cover, and lower the heat to simmer, and cook until all the the water is absorbed into the rice.
When everything is cooked, mix the rice and plantain/veggie mixture together, and let the flavors blend together for several minutes before serving.

The above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
