RICE - Spanish

Ingredients

2 cups Water
1 � cups Brown Rice
� cup Celery
� cup frozen Corn
� cup diced Green Peppers
� cup diced Onions
1 tsp. chopped Garlic
1 � tsp. Chili Powder
� tsp. ground Coriander
1 tsp. ground Cumin
� tsp. ground Hot Red Pepper
� cup thickened Crushed Tomatoes or � of a small can of Tomato Paste mixed with an equal volume of water

Preparation

Place the water in a covered glass pot on the stovetop and bring to a boil. Add the rice and seasonings and stir. When the water begins to boil again add the remaining ingredients and mix well. When the contents begin to boil, stir again and cover, lower the heat to simmer. Do not stir again. The Rice should be done in about 30 minutes.

Spanish Rice is also good as the Main Dish and goes well with a salad.

The above recipe is in keeping with God's creation intent (Genesis 1:29-31): 'Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground-- everything that has the breath of life in it-- I give every green plant for food." And it was so. God saw all that he had made, and it was very good.' (NIV) Let no animal suffer or die that we may live!
