Vegetarian Recipes – Colcannon ala SAEN
The exploitation of animals for food is one of the
largest crises that currently face our society. Factory farming causes
severe suffering for hundreds of millions of animals along with
polluting the environment and causing serious negative consequences for
our health.
The single best way that we can all have
a positive effect on these issues is to change our eating habits by
eliminating all meat, poultry, fish, and dairy products. However, if we
are to be successful with these changes, we must learn an alternative
style of cooking.

sharing some of our favorite vegetarian recipes in our newsletters.
This is one of our favorite recipes
and is very quick and easy to make.
1 medium onion or 1 leek, chopped
1 tbsp oil
1 small head of green cabbage, coarsely chopped
3 carrots, sliced thin
1/8 tsp nutmeg
1 – 2 tsp caraway seeds
3 vegan hotdogs
Salt, pepper, parsley, vegan margarine to taste
Prepared mashed potatoes
Sauté
onion in oil over medium heat until soft (2- 3 minutes). Add cabbage,
carrot, hotdogs, nutmeg, and caraway seeds. Add a little water for
steaming and cook covered until soft, stirring occasionally (about 15
minutes). Season to taste with salt, pepper, parsley, and vegan
margarine. Mashed potatoes are a great accompaniment to this dish.
