Papaya and Avocado Salad
1 avocado, peeled, pitted, & cubed
1 papaya, peeled, seeded, & cubed
1 tomato, cubed
1 jar heart of palm, drained, rinsed, & cubed
¼ cup chayote squash or jicama, peeled & julienned
½ onion, chopped
salt & pepper to taste
lime vinaigrette (recipe below)
¼ cup black olives, chopped
1 tbsp cilantro, chopped
Combine avocado, papaya, tomato, heart of palm, chayote or jicama, and
onion in a large bowl. Season with salt and pepper, sprinkle with lime
vinaigrette, and refrigerate, covered for 1 hour. Place into serving
bowls and garnish with olives and cilantro.
Makes 4 servings
Lime Vinaigrette
1
clove garlic, crushed
½ tsp Dijon mustard
3 tbsp lime juice 2 tbsp tahini
¼ to ½ cup olive oil ½ tsp salt
Blend all ingredients together.
