Candied Sweet Potatoes, Apples, and Plantains<\/h2>\n

Ingredients<\/strong><\/p>\n

3 lbs. Sweet Potatoes
\n3 Apples, large
\n4 Plantains OR 6 Saba Cooking Bananas
\n1\/4 cup Molasses, unsulfured or Barbados
\n1 tsp. Cinnamon, ground<\/p>\n

Preparation<\/strong><\/p>\n

This delicious vegan recipe will make 10-12 side dish servings, and it is\u00a0 great with any festive meal. This recipe can be made in either a microwave oven\u00a0 or in a conventional oven at 350 degrees F.<\/p>\n

Wash and peel the sweet potatoes, cut lengthwise into strips not exceeding 1″ in width. Cut each strip into slices and place them in a large covered baking dish.<\/p>\n

Wash the apples, cut into quarters, remove the stem and core, cut into slices, and cut each slice into bite size pieces, and place in the baking dish.<\/p>\n

Wash and peel the plantains or saba bananas, cut into slices and place in the baking dish.<\/p>\n

Add the molasses and cinnamon to the ingredients in the baking dish, mix well, cover, and bake until the potatoes are tender, mixing about every 10 minutes.<\/p>\n

Serve and enjoy!<\/p>\n
