Ingredients:<\/h3>\n

2 lbs. Lita Squash, approximate weight
\n2 lbs. Onions
\n1 – 28-oz. can Crushed Tomatoes
\n1\/2 tsp. Fennel Seeds
\n1 tbsp. Basil, dried leaves
\n1 tbsp. Oregano. dried leaves
\nCayenne Pepper or Hot Sauce, to taste<\/p>\n

Preparation:<\/h3>\n

This easy to prepare lita squash stew recipe can be made in a large covered\u00a0 dish in the microwave oven or in a slow cooker. It’s great for leftovers, and\u00a0 can be served as is in a bowl, or on a plate over rice or pasta.<\/p>\n

Begin by washing and cleaning the lita squash, and remove the stem and flower ends. Cut into bite sized pieces and add to the cooking container.<\/p>\n

Peel and wash the onions, cut into bite sized pieces and add to the squash in the cooking container; add the other ingredients, mix well, cover, and cook until the veggies are tender, mixing every 10-15 minutes in the microwave.<\/p>\n

Serve the lida squash stew\u00a0and Enjoy!<\/p>\n
