Cranberry\u00a0 Pineapple Relish with Dates – A Vegan Delight for any festive meal<\/h2>\n

Cranberry Pineapple Relish with Dates<\/figcaption><\/figure>\n

Ingredients:<\/h3>\n

1 – 12-oz bag of Cranberries, fresh or frozen
\n1 Pineapple, small, or 1\/2 large
\n8 Dates, pitted, as a sweetener
\nOR 1\/8 tsp. Stevia Extract (powder) as a sweetener<\/p>\n

Preparation:<\/h3>\n

Cranberry pineapple relish is a\u00a0\u00a0wonderful and slightly tart\u00a0vegan treat\u00a0that goes with almost any meal.<\/p>\n

Wash and clean the pineapple. Cut off the leaf a stem ends. Cut the pineapple in half lengthwise. It you are using a large pineapple you may want to store one half in a tightly closed container in the refrigerator to eat later. Cut the half pineapple pieces into slices and remove the outer rind. Place the pineapple pieces in the bottom of the blender or food processor container.<\/p>\n

Wash the fresh Cranberries.\u00a0 Place the dates or stevia and the cranberries in a blender or food processor and chop into small pieces.\u00a0 Do not mash or puree.<\/p>\n

Taste the mixture for flavor and sweetness, and adjust to your personal taste.\u00a0\u00a0 Be careful not to overdue either, for both sweetness and flavor improve over time.<\/p>\n

Place in a tightly closed container and store in the refrigerator.\u00a0 It is best to prepare the day before serving to enhance the flavor and color.<\/p>\n

The advantage to this relish is that no refined sugar is needed.<\/p>\n
