Oregano, dry<br \/>\n1 tsp. Garlic, powder (optional)<br \/>\n4 tsp. Yeast, baking<br \/>\n1\/4 cup Molasses, unsulfured<br \/>\n1-2 tbsp. Lecithin, soy, liquid (optional dough enhancer)<br \/>\n1\/4 tsp. Ginger (optional dough enhancer)<br \/>\n1\/4 tsp. Vitamin C, crystals (optional dough enhancer)<br \/>\n2 cups Water (approximate)<\/p>\n<p><strong>Pizza Sauce with Broccoli, Onions and Nutritional Yeast<\/strong><br \/>\n1 &#8211; 28 oz. can Tomatoes, crushed<br \/>\n1 &#8211; 6 oz. can Tomato Paste<br \/>\n1 lb. Broccoli, cut, fresh<br \/>\n1 Onion, medium size, diced<br \/>\n1 tbsp. Garlic, crushed (optional, to taste)<br \/>\n1\/2 cup Peppers, Bell, diced<br \/>\n1 tbsp. Oregano, dry<br \/>\n1\/4 tsp. Fennel Seeds<br \/>\nCayenne Pepper OR Hot Sauce (to taste)<br \/>\n1\/2 &#8211; 3\/4 cup Nutritional Yeast<\/p>\n<h3>Preparation:<\/h3>\n<p>This pizza with broccoli and onion\u00a0recipe is for a thick crust pizza, which we bake in an 11 inch X 17 inch stone baking pan. The finished pizza will then be cut into 12 squares, which is enough to feed four to six adults.<\/p>\n<p>Place the dry dough ingredients in your dough mixer or a large bowl.\u00a0 If the flour is freshly ground (like ours) and is still hot from grinding, do not add the yeast until the flour has been mixed with water and has cooled down.\u00a0 If you prefer to use fresh garlic, use 2-3 tsp. and blend with a cup of water at high speed in your blender.\u00a0 Use this water-garlic mixture in place of the first water added to the dry ingredients.<\/p>\n<p>Add the lecithin (pour in the estimated amount, as it is very sticky) to the dry ingredients along with the molasses and about half of the water, and mix well.\u00a0 Add additional water in small quantities, as needed, to facilitate proper mixing and kneading.\u00a0 (Don&#8217;t forget to add the yeast if your flour was freshly ground.)<\/p>\n<p>We prefer to coat the baking pan with a dusting of flour or corn meal to prevent sticking.\u00a0 We also use a little flour to help shape the dough, by placing a dusting on our counter top and on our hands.\u00a0 We begin by forming a ball with our hands, adding a little flour as needed.\u00a0 Then we press the dough out on the flour dusted counter top and work into the approximate shape of the baking pan.\u00a0 We turn the dough over several times during this process, and re-dust as necessary with flour.<\/p>\n<p>We then transfer the dough to the baking pan.\u00a0 It is easier if the dough is rolled or folded prior to lifting from the counter top.\u00a0 Unfold the pizza dough in the baking pan and work into sides and corners.\u00a0 We have a little roller that makes this process very easy.\u00a0 Leave the edges of the dough slightly higher than the center.<\/p>\n<p>Place the baking pan in the warming drawer of your oven or in another warm place to rise.\u00a0 When the dough has doubled in size, it is ready for the first phase of baking.<\/p>\n<p>While the dough is rising, we prepare the sauce and veggies.<\/p>\n<p>We cook our pizza sauce in a covered glass bowl in the microwave oven so that it doesn&#8217;t burn as it&#8217;s thickening.<\/p>\n<p>Wash, peel, and dice the onion and place in a covered glass pot or bowl.\u00a0 Peel and dice or crush the garlic and add to the pot.\u00a0 Wash and dice the peppers and add to the pot.\u00a0 Add the oregano and fennel seeds.<\/p>\n<p>Place the covered bowl in the microwave oven on &#8220;high&#8221; for about 5 minutes, or until the onions begin to become translucent. Add the crushed tomatoes, tomato paste and hot pepper, mix well and continue cooking on &#8220;high&#8221; in the microwave oven until the sauce begins to thicken.<\/p>\n<p>Add the broccoli and nutritional yeast to the bowl, mix well, cover, and cook for another few minutes.<\/p>\n<p>If cooking on the stove top, saut\u00e9 the veggies in a little water in a pot.
