1 cup Spelt or Whole Wheat Flour
\n3 cups Rolled Oats (oatmeal), quick
\n1 cup Sunflower Seeds
\n2 tsp. Cinnamon, ground
\n2 tsp. Allspice, ground
\n1\/2 tsp. Nutmeg, ground
\n1\/2 tsp. Cloves, ground
\n3 cups Raisins
\n4-5 Bananas, medium size, ripe
\nApple Juice or Water, as needed<\/p>\n
Cookies –\u00a0 Banana Oatmeal Raisin Sunflower Seed Spice Preparation:<\/h3>\n
This delicious and healthful banana oatmeal raisin sunflower cookie recipe\u00a0 can be prepared and baked in less than an hour, and will make approximately 24 cookies.\u00a0 The recipe contain no added oil or sugar, and the cookies are totally sweetened\u00a0 by the raisins and bananas. They are great for dessert or a snack, and are\u00a0 wonderful treat to take as a snack when traveling.<\/p>\n
Preheat your oven to 350 degrees F. (175 degrees C.)<\/p>\n
Place the spelt, or whole wheat flour, and the quick rolled oats (oatmeal) in\u00a0 a bowl and mix together.<\/p>\n
Add the sunflower seeds, cinnamon, allspice, nutmeg, and cloves and mix well.\u00a0 Add 2 cups of the raisins and mix well to ensure that the raisins are not\u00a0 sticking together, and that they are thoroughly coated with the flour mixture.<\/p>\n
Place the peeled bananas and the remaining cup of raisins in the container of\u00a0 a high speed blender. Cover and run at high speed until all the ingredients are\u00a0 thoroughly blended and smooth.<\/p>\n
Add the banana-raisin mixture to the flour mixture and mix thoroughly with a\u00a0 stiff spatula or spoon. After adding all the liquid mixture, if the cookie dough\u00a0 is too stiff you may add a little apple juice or water. A thinner dough will\u00a0 make a flatter cookie. A stiff dough will make irregular, thick cookies like the\u00a0 ones shown in the photo. (To test for dough stiffness, we stick a soup spoon\u00a0 upright into the dough. If the dough is stiff enough, the spoon will remain\u00a0 upright.)<\/p>\n
Sprinkle a baking sheet with a light coating of oatmeal, place the cookie\u00a0 dough in 24 equal sized “mounds.” (We usually start with a well rounded\u00a0 tablespoon full of cookie dough for each cookie, and add any leftover dough to\u00a0 the cookie mounds on the baking sheet.) Smooth and shape each cookie with a\u00a0 spoon or spatula, as desired.<\/p>\n
Place the baking sheet in the preheated oven and bake at 350 degrees F. for\u00a0 20-25 minutes. Various ovens bake differently, so we suggest that you begin\u00a0 checking the cookies after 15-20 minutes of baking time. The cookies should be\u00a0 firm, but still soft enough to be a little “springy.” Be careful not to\u00a0 over-bake.<\/p>\n
When the banana coconut raisin oatmeal spice cookies are baked, remove from\u00a0 the oven, cool, and enjoy.<\/p>\n
Store any leftover cookies in the refrigerator in a covered container or\u00a0 storage bag.<\/p>\n
