Hi.
I've recently made the decision to become a vegetarian and found your website while searching the web. I tried two of the recipes you recommended today and just wanted to say THANKS! They were both excellent!!!Bean And Artichoke Salad

Thanks for taking the time to let me know you enjoyed the recipes, and CONGRATULATIONS on making one of the most important steps to enhancing your health and well being as well as that of the planet by choosing to become a Vegetarian.
Should time and finances permit, you also might consider attending the World Vegetarian Congress held once every two years in a different country, this year in Jakarta and the fabled island of Bali in Indonesia.
Hosted by the International Vegetarian Union, the theme of this 39th World Congress is called: "SAVE OUR LIFE, SAVE OUR PLANET."

And I will pass on your endorsement of the recipes to their creator, Ann Esselstyn, whose spouse, Dr. Caldwell Esselstyn, wrote the book from which they came: "Preventing and Reversing Heart Disease."
Another book you might find of interest was written by their son ("An apple falls not far from the tree?"), Fire Fighter Rip Esselstyn, who wrote another best seller: "The Engine 2 Diet: The Texas Firefighter's 28-Day Save-Your-Life Plan that Lowers Cholesterol and Burns Away the Pounds"
And should you choose to learn EVEN MORE about the urgent necessity for people to switch to a Vegan diet, you owe it to yourself to read: The China Study, written by my dear friend, Dr. T. Colin Campbell and his son, Tom.
Hailed by the New York Times as the "...most comprehensive study ever done on the cause (and prevention) of disease," the reporter who wrote that, and other media outlets, were soon stifled due to the power of the meat and dairy industry lobbyists, but word-of-mouth by enlightened readers have made The China Study a NY Times Best Seller four times over.
You didn't say what caused you to become Vegetarian but ALL reasons are good! I hope the above information will help you on your journey.
