Bean And Artichoke Salad
Serves 6
1 large tomato, chopped
1 red bell pepper, chopped
1 small red onion, chopped
1 cup cilantro, chopped
1 can red kidney beans, rinsed
1 can chick peas, rinsed
1 can artichoke hearts, rinsed and chopped
Combine in bowl
2 tbs fresh lemon juice
2 tbs balsamic vinegar
2 tsp spicey brown mustard
1 tsp dried basil
1 tsp dried oregano
1 tsp tyme
1 clove garlic, mincedCombine, pour over beans, and serve chilled. For a scrumptious full meal serve over Brown Rice.
