BROWNIES - MOCK, UNCOOKED
Courtesy of Jodi Spencer: "It LOOKS like brownies, tastes incredible, is uncooked and all fruit. Even my two-year old loves them!"

Ingredients
3 cups dried banana chips

1/4 cup dried apricots
1/4 cup prunes
2 dried papaya spears (about 1/2 c, if chopped)
1 and 1/2 cup raisins
1/3 cup carob powder
shredded coconut (optional)

Preparation

In food processor chop banana chips until well pulverized (you can process until they are powdery for a smoother textured finished product, or until like coarse crumbs for a more textured brownie... kinda like "with nuts or without" for real brownies). Add fruits and process until all fruit is a big, smooth, sticky blob. Place mixture in a big bowl, and knead in carob powder and shredded coconut (optional). Press into a 12" x 18" inch pan. If you want a glazed brownie, mix 3 T date syrup (pitted dates blended w/ small amount of distilled water) with 1/4 cup carob powder, plus a little hot water (a tablespoon or so, enough to make it spreadable and to melt any carob lumps). Sprinkle coconut on top (optional). Cover with plastic, and let it sit at room temperature for at least an hour, or refrigerate for a firmer texture.
