Yam Stuffed Oranges
(from Simply Good Recipes & More)

Prep time: 15 minutes - baking time: 45-60 minutes

5 large, sweet yams or sweet potatoes
1/2 to 3/4 cup fresh orange juice (save orange halves)
1/4 rounded teaspoon nutmeg
1/2 rounded teaspoon cinnamon
1/2 to 3/4 cup walnuts, coarsely chopped (optional)

Bake yams in their skins at 400 degrees fro 45 to 60 minutes or until soft in center. Put all ingredients in a food processor with a plastic blade or in a blender.   Puree the mixture, adding enough orange juice to make it the consistency of mashed potatoes.  Place the yam stuffing into the orange halves that have been fully juiced and cleaned out. Bake at 350 degrees until the stuffed oranges have heated through (approximately 20 minutes). Serve hot or cold.

Notes: Use a pastry gun to place the yam stuffing into the empty orange shells to give the dish a more festive look. This tastes very much like pumpkin pie, so it might be put into a pie shell and served for dessert. This may be made the day before and baked just before serving.
