Ginger Noodles

Ingredients
- 1 8-ounce package soba noodles
- 3 tbsp seasoned rice vinegar
- 3 tbsp reduced-sodium soy sauce
- 2 tsp finely chopped fresh ginger
- 2 minced garlic cloves
- half or full finely chopped jalapeno pepper
- 2 finely chopped green onions, including tops
- 1/2 cup chopped fresh cilantro
Instructions
- Cook noodles in boilig water according to package direcitons.
- When tender, drain and rinse.
- Mix vinegar, soy sauce, ginger, garlic, jalapeno pepper, green
oniones and cilantro (if using it).
- Pour over cooked cooked noodles.
- Toss to mix.
