Ginger Noodles

Serves: 4


  • 1 8-ounce package soba noodles
  • 3 tbsp seasoned rice vinegar
  • 3 tbsp reduced-sodium soy sauce
  • 2 tsp finely chopped fresh ginger
  • 2 minced garlic cloves
  • half or full finely chopped jalapeno pepper
  • 2 finely chopped green onions, including tops
  • 1/2 cup chopped fresh cilantro


  • Cook noodles in boilig water according to package direcitons.
  • When tender, drain and rinse.
  • Mix vinegar, soy sauce, ginger, garlic, jalapeno pepper, green oniones and cilantro (if using it).
  • Pour over cooked cooked noodles.
  • Toss to mix.
