Brazilian Black Beans

Ingredients
- 1/2 cup water
- 2 chopped onion
- 3 cloves chopped garlic
- 2 chopped small jalapeno pepper
- 1 carrot, thinly sliced
- 1 celery stalk, sliced
- 2 cups cubed yam
- 1 seeded, cubed red bell pepper
- 1 cup chopped cilantro
- 1 cup chopped fresh or canned tomato,
- 2 peeled and well chopped oranges
- 2 15-ounce cans undrained black beans
- 1 tsp ground coriander
- 1 tsp ground cumin
Instructions
- Heat the water in a large pot, then add the onion, garlic, jalapeno
pepper, carrot, celery and weet potatoes.
- Cook over high heat stirring frequently, until the onion is tender,
about 5 minutes.
- Add the bell peppers and cilantro and cook for 3 minutes, stirring
frequently.
- Add tomato, oranges, black beans.
- Cover lightly and cook over low heat for 15 to 20 minutes.
- Toss to mix.
