Brazilian Black Beans

Ingredients

  • 1/2 cup water
  • 2 chopped onion
  • 3 cloves chopped garlic
  • 2 chopped small jalapeno pepper
  • 1 carrot, thinly sliced
  • 1 celery stalk, sliced
  • 2 cups cubed yam
  • 1 seeded, cubed red bell pepper
  • 1 cup chopped cilantro
  • 1 cup chopped fresh or canned tomato,
  • 2 peeled and well chopped oranges
  • 2 15-ounce cans undrained black beans
  • 1 tsp ground coriander
  • 1 tsp ground cumin

Instructions

  • Heat the water in a large pot, then add the onion, garlic, jalapeno pepper, carrot, celery and weet potatoes.
  • Cook over high heat stirring frequently, until the onion is tender, about 5 minutes.
  • Add the bell peppers and cilantro and cook for 3 minutes, stirring frequently.
  • Add tomato, oranges, black beans.
  • Cover lightly and cook over low heat for 15 to 20 minutes.
  • Toss to mix.
