"Joyful Curmudgeon" An oxymoron?
No! I see all the beauty of God's creation and I'm joyful. At the same
time, I see all the suffering and corruption going on in the world, and feel
called to help expose and end it so that we may have true peace and compassion.
When most people hear the words “mashed potatoes,” they probably think (as I’ve always thought) of a pile of white mashed potatoes topped with some sort of gravy.
Well, we came up with a new twist to the usual bland “mashed potatoes,”
and they’re colorful, tasty, and easy to make: Mashed Potatoes with Beets,
Onions and Allspice. Although we used canned beets for this recipe, fresh
cooked beets could be used. For this recipe, visit:

Another colorful, tasty change to the usual mashed potatoes is our Mashed
Potatoes with Carrots, Onions, and Rosemary. For this recipe, visit:

Next time, we will experiment with fresh or canned spinach for green mashed potatoes. It’s fun to try new ideas!
