Letter from Diana Castlen about Our Web Site - 29 May 2005

Hello Folks:

I came across your website and all I could say was wow! It is so nicely done with great easy to follow instructions and of course the photos are very nice. Your website is a Godsend because I am at a loss of how to change my eating habits to vegetarian. Something happened recently where I began to read about the tremendous cruelty being committed on animals in the name of having a big fat juicy hamburger that I used to enjoy. I never imagined that these atrocities could exist in our country. There is an emptiness inside me to think that I have been contributing to such cruelty when I profess to have tremendous love and compassion for animals.

Also, I was not aware that the bible is packed full of scripture supporting not eating flesh. I have been so ignorant about this area of my life and I thought I was a compassion spiritual person! Wrong! But now I can change all that with the help of your website. I'm not sure where to begin but the veggie burgers look good. It also looks like my whole kitchen is going to have to change. Wish you all were in San Diego to teach a class!

Anyway thanks for the time you spent putting it all together for people like me... :-)

Dear Diana:

Thank you so much for your compliments and very encouraging words. You made our day!

The easy way to make the transition to a vegetarian/vegan diet is to start with types of food you already enjoy such as soups, salads, fruit smoothies, etc. If you like ethnic foods, try to prepare some of our recipes, and you'll soon see that you won't want the flesh any more, and you'll find you'll be having fun in the kitchen experimenting with a lot of new dishes. If we can be of any help, please let us know.

In the Love of the Lord,

Frank and Mary
